Dessert Wines

There is a rich tradition of dessert winemaking in Australia; at the turn of the century it was one of the only wine styles being made. Often enjoyed with cheese after a meal, today’s dessert wines are often made using Semillon, Shiraz and Viognier. Popular techniques include cane-cutting, where each fruiting cane is detached from the vine. The bunches are left hanging until the fruit has dried and concentrated in flavour and sugar.
